More Sausage Soup

I've discovered that Sausage is unreliable... the first time I made this soup Katie bought some sausage that was on sale. Since then I've tried two other sausages, and each has been different.

The first sausage was the best, however. Some kind of mildly spicy sausage. The second sausage was "hot", and was incredibly hot. I cannot recommend using hot sausage.

This most recent sausage tastes much more... I guess traditional. Which isn't bad, but I really liked that first sausage.

Anyway, here's the general recipe:

  • 2 16oz cans of chicken broth
  • 16oz can hominy
  • 16oz can diced tomatos (with seasonings; I recommend zesty mild chiles or something)
  • 16oz water (fill up one of those two cans - probably the tomato one, just to help get all of it out)
  • 1lb sausage
  • 1 small yellow onion

  1. chop the small yellow onion into pieces which are sizes you will enjoy eating.
  2. slice the sausage into little discs, again sized to your preference.
    • I've heard sautéing these two things can be useful. I've never done this, but I've also found that sausage is quite oily. Sautéing should remove some of that oil, at least.
  3. toss these things into the crock pot first, and the liquids after (if you do it the other way around, things go splash all over the place :P)
  4. add various seasonings. salt, pepper, mustard seeds. you can go pretty light on the seasonings, depending on how flavorful the sausage is. I've found that sausage tends to be pretty flavorful.
  5. cook on low for 6ish hours.
